Despite the April showers, spring is definitely in the air and we think it’s the perfect time to make some delicious treats to celebrate a season that we both love to bits.
Birds Nest Cookies can be enjoyed year round, but we’ve made a coconut version to really get into the spring of things. We’ve gone a step further too by switching out the usual sugar cookie recipe for something a bit more decadent: a rich and buttery shortbread.
The combination of the shortbread, coconut and jam is pure bliss, and make the perfect snack during a picnic at the park, or a patio BBQ with friends. We like to use homemade jam when we make ours, but if you don’t have any in your pantry, be sure to opt for a quality preserve as it really pays off in the final product. The Vancouver Farmers Market is a great spot to pick up something local, fresh and in season.
Here’s what you’ll need to make our favorite Coconut Shortbread Birds Nest Cookies:
1 cup butter, softened
⅔ cup sugar½ tsp vanilla extract
2 cups all-purpose flour
½ cup of your favorite homemade jam
1 egg, beaten
½ cup sweetened coconut flakes
Preheat your oven to 350°C.
In a large bowl combine softened butter, sugar and ½ teaspoon vanilla extract. Beat the butter mixture at medium speed, scraping bowl often, until creamy. Add the flour then beat at low speed, scraping bowl often, until well mixed.
Once your cookie dough is ready you can grab a small amount of dough and roll it into a ball. Do the same for the remainder of the dough and place evenly spaced on a cookie sheet. Place in the fridge for thirty minutes to firm.
Remove from the fridge and roll each ball in an egg wash, then in coconut flakes. Lastly use your thumb and make an imprint in the dough, and spoon about ½ tsp of jam inside.
Bake for about 14-18 minutes, or until golden brown. Let cool completely on baking sheet before transferring to cooling rack. Serve and enjoy!
